Jenni Makes Juliette's Kataifi Recipe








KATAIFI WITH CREAM

Step 1.  Make the syrup and allow it to cool

Syrup ingredients:
2 cups of sugar
2.1/2 cups of water

Syrup method:
Bring to the boil, then simmer until the syrup reduces to half its quantity.

Step 2.  Make the cream

Cream ingredients:
1 x 600ml carton of thickened cream
3/4 cup of milk
2 x tablespoons of sugar
1/2 cup of corn flour dissolved in 2/3 cup of milk

Cream method:
Mix all ingredients together in a saucepan, bring to the boil, stirring constantly, then lower heat until cream thickens.

Step 3.  Make the Kataifi

Kataifi ingredients:
1 packet of Kataifi
250g of unsalted butter

Kataifi method:
Separate the Kataifi well, layer half the packet on the bottom of a deep rectangular tray (sprayed with Conola).
Pour the cooled cream as the middle layer and spread out.
Layer the other half of Kataifi on top.
Melt the packet of unsalted butter and pour on top.
Bake in a moderate oven until the surface browns.
Cut up, and pour the cool syrup over it as soon as it comes out from the oven and serve hot.
